Simon and Garfunkel were on the radio and I was singing along with them about the young man who wants his former lover to perform some impossible tasks, such as making him a shirt without a seam and then washing it in a dry well, before she'll be a true love of his.
I don't know how many times I have heard the Scarborough Fair Canticle but I only know the words for the first and second verse and the refrain.
The refrain, parsley, sage, rosemary and thyme, reminded me of a dish I often make in the summer with these four herbs fresh from my garden. For years we were eating tri-coloured sage which turned out to be ornamental sage and not the grey-green edible one. Anyway, we are still alive so it didn't matter.
This dish is quick, easy, cheap and delicious. I always throw in a dash of S&G when I am making it.
This is more a suggestion than an exact recipe. The amount of herbs used depends on your preference. I never mind preparing more than needed because any leftovers can be saved and used in roasts or soups.
Ingredients: Serves 2
A
Egg noodles, about 175 gr
B
Fresh Italian parsley - 1 cup, chopped
Dried sage, rosemary and thyme - 1 tablespoon each
Garlic - 6 cloves peeled
Coarse sea salt - 1/2 tablespoon
Cracked black pepper - 1 tablespoon

Olive oil
Method:

Cook the pasta in boiling water till al dente.
While the pasta is cooking, put ingredients, B, in a mortar and pestle and pound them into coarse bits or whirl it around a bit in a food processor.
Heat some oil in a frying pan and swirl around the pan. Stir the herb mash into the oil to cook for about a minute. Drain the cooked pasta, reserving about a cup of the starchy water. Add the pasta to the frying pan and mix with the herbs. Add some pasta water to moisten it. Dish up.
Serve to the ones you love with unconditional love! Enjoy!
Note: Mr. KC found the pasta too dry so I added some yogurt to the pasta.
Also, dried herbs are much stronger in favour so I used less than I would have for fresh herbs.

When I first planned my herb garden, that very song was running through my head, and those were the first four plants I bought. Now the sage and thyme winter over, and each year I hum the song while I'm at the garden center buying rosemary and parsley. Combined, they do make a wonderful flavoring!

Lydia - I also bought those four herbs when I started my garden in Vancouver. Just because of the song.
I moved in the fall and have a handkerchief-sized backyard. I kept some cuttings and will have the pleasure of starting over again soon, this time in pots.
