It was a good thing that Min, at the Bad Girl's Kitchen, sent me an email reminder for the Taste and Create XVIV deadline. I got Taste and Create mixed up with another food blogging event and thought the deadline had been extended to June 8.My partner for May is Marthe of Culinary Delights and I had such an enjoyable time browsing through her blog. She is an excellent baker and has many lovely cakes and cookies.
Above all, I was so taken with her flower pot cake. It is the cutest thing, she even had gummi worms crawling out of the soil made of ground Oreo cookies. I'm not a baker but I decided I would make these flower pot cakes. I even bought the clay pots. Then I found out I only had today to cook and post so I scrapped that idea and chose her recipe for Thai style chicken with coconut curry broth. I am quite confident that I can whip up an Asian meal easily whereas baking is not my forte and the flower pot cakes might have ended up in the landfill.
Marthe's recipe is adapted from Thai-Style Halibut with Coconut Curry Sauce. I changed it a bit by adding slivers of garlic and ginger. As I am rushing to meet the deadline I'll describe the recipe briefly:
Slice four shallots and fry in oil.
Add the slivers of ginger and garlic and 2 teaspoons of curry paste. Mix and fry for a couple of minutes.
Add 2 cups of chicken broth and simmer for 5 minutes.
Add half a cup of coconut milk and 4 chicken thighs. Bring the sauce to a boil, lower the heat to simmer, cover the pot and cook the chicken for 20 minutes or until the meat isn't bloody. Add a quarter cup of chopped cilantro and some chopped green onions to the sauce. Stir everything together. Squeeze some lime juice and add to the sauce.
Serve the chicken on some sauteed spinach or bok choy. I had four spears of asparagus so I sliced them lengthwise with the mandoline to form long shreds. I blanched the asparagus shreds in water.This is a delicious and easy dish. Close your eyes and you'll think you are in Bangkok!

This looks realy delicious, what a great idea to add ginger and garlic!! I'll defintely try that next time I'm making this dish!! I really enjoyed going through all your recipes!
I also tried to replicate your pineapple coconut pudding, but somehow it didn't work out exactly how it should have....
